One-Dish Baked Garlic Chicken

When a recipe is too easy, I immediately expect something will go wrong with it.  Like it won't taste any good.  But I can be pessimistic about almost everything.  How sad, huh?




Pessimist or not, this one-dish meal won't fail you.  Ever.

You'll be marinating, baking and serving in one single dish means less time spent cleaning up afterwards.

Upon seeing the chicken, my little niece thought they were burnt; they aren't.  In fact, the skin became crisp which is always a plus in my book.

If you're Filipino then you might say that this is just like adobo.  You're right, but adobo done in a different way.




How do you make chicken look nice in photos?  Is it possible?  Is there magic involved?  Because I'd like to know.  Do you have any tips to share with us?  And with that said, don't be too harsh with how meh my photos are.  Thank you very much, I truly appreciate it.


Baked Garlic Chicken

What you'll be needing:

1 kilo bone-in, skin-on chicken thighs

4 tablespoons soy sauce

1/2 tablespoon (or 1 1/2 teaspoons) brown sugar

4 tablespoons oyster sauce

1 tablespoon Worcestershire sauce

1 head garlic, peeled and crushed

freshly ground black pepper, to taste


What you'll be doing:

In an oven-safe dish with a few good inch-high sides, which can fit all the chicken thighs in a single layer, you will mix the soy sauce and brown sugar until it has dissolved.  Next add the oyster and Worcestershire sauces, mix again.  Take the chicken thighs and arrange them in a single layer over the marinade.  Turn chicken pieces to coat each sides and season with pepper.  Take a fork and pierce each chicken thigh then turn them again in the marinade.  Scatter the peeled and crushed garlic all over the dish and place a clove under each chicken thigh skin.  

Let sit for at least 1 hour*.

Preheat oven to 170ºC.  Arrange the chicken thighs skin side up and bake for 1 hour.

*You can also make this ahead of time: put the rest of the marinated chicken (marinade and garlic included) in a large ziploc bag and put in the fridge until ready to bake.




Enjoy hot with equally hot steamed rice or if you truly love garlic, make some garlic fried rice, too!
